Saul Zaentz (/ˈzænts/; 28. februar 1921 – 3. januar 2014) bio je američki filmski producent, najpoznatiji po osvajanju tri Oscara za najbolji film zahvaljujući produciranju Leta iznad kukavičjeg gnijezda, Amadeusa i Engleskog pacijenta. Zaentz je prije bavljenja filmom bio jedan od direktora muzičke izdavačke kuće Fantasy Records i najveći dio svog prihoda stekao zahvaljujući popularnom bendu Creedence Clearwater Revival, a sa kojim je kasnije bio u sporu. Zaentz je također poznat po tome što je 1976. godine otkupio autorska prava za popularne fantasy knjige Hobit i Gospodar prstenova J. R. R. Tolkiena, te ih nakon niza neuspjelih pokušaja ekranizacije 1997. prepustio Peteru Jacksonu.
